Mixed Berry, Nut & Seed Granola (grain-free)

Granola, granola – so much toasty, delicious granola!

This mixed berry, nut and seed granola is the bomb – can you tell how excited I am about it?

Have you ever made your own granola? If not – then you’re in luck, cause it’s so easy! If you have – then you’ll know how easy it is.

This is, to date, my favourite granola EVER (although I do love my other granola recipes too – it’s not really fair to pick favourites). It’s so toasty and crunchy and amazing that I just can’t stop eating it…

My top 5 favourite ways to eat this granola:

-by itself (eaten by the handful, so cheeky)
-sprinkled on top of my amazing dairy-free “yoghurt”
-in bowl with almond milk (eaten like muesli with a spoon)
-sprinkled on top of a smoothie OR a smoothie bowl
-served with fresh banana slices or homemade banana “ice cream”

You’re also in luck cause this granola recipe is totally healthy as well as delicious.

This recipe is 100% grain-free, gluten-free, refined sugar-free, dairy-free and plant-based

…AND it contains healthy fats, good carbs and good protein.

Ingredients:

-1/4 cup flax seeds
-1/2 cup pumpkin seeds
-1/2 cup sunflower seeds
-1/2 cup sliced almonds
-1/2 cup whole almonds
-1/2 cup pecan nuts
-1/4 cup desiccated coconut
-3 tablespoons 100% pure maple syrup
-2 tablespoons coconut oil (melted)
-3 tablespoons unsweetened nut butter (macadamia or almond)
-1 teaspoon ground vanilla powder/ pure vanilla extract
-1 teaspoon cinnamon
-pinch sea salt
-1/2 cup dried cranberries
-1/2 cup dried cranberries
-1/2 cup dried blueberries

Instructions:

-preheat oven to 180 degree’s Celsius/ 360 Fahrenheit

-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt

-mix all of the nuts and seeds together with the melted desiccated coconut, coconut oil, pure maple syrup, nut butter, cinnamon, vanilla and sea salt

-grease an oven tray with a little bit of extra coconut oil & spread the granola mix evenly onto the tray

-place in the oven and bake for 15-20 minutes, stirring the granola mix every 5 minutes

-once toasty and delicious, remove from the oven and leave to cool

-add the dried cranberries, goji berries and blueberries

-eat & enjoy!

-once cooled, store in an airtight container to keep fresh

-munch on handful as a snack or enjoy sprinkled over smoothies, smoothie bowls or healthy banana ice cream! YUM!
