What does it take to make the perfect omelette?

All it takes is 2 eggs and a good filling!

And here, I’m revealing the perfect savoury filling!

I love making omelettes, they are quick & easy to make and it’s an exciting way to eat eggs! For me it always feels more special to enjoy an omelette than eating eggs any other way.

Omelettes are so much fun because you can fill them with so many things… the options are endless.

They’re also super healthy! Eggs are a great source of healthy fats & good protein, and you can make your omelette a complete meal by adding some good carbs. To add healthy carbs to my omelette’s I like to use this veggie combination. It’s really yummy and I’m excited to be sharing it with you!

This recipe is naturally grain-free & gluten-free, dairy-free, sugar-free and is great for anyone following a vegetarian, Paleo for Banting diet.

Omelettes are perfect for breakfast, brunch, lunch or dinner!

Here’s what I use to make the perfect omelette…

Ingredients:

-2 eggs
-1 red bell pepper
-1 cup cherry tomatoes
-1 cup sliced button mushrooms
-1/4 onion
-1 handful baby spinach
-1 or 2 teaspoons cold-pressed macadamia nut oil (or another oil good for cooking)
-1 teaspoon Italian herb mix (or a mix of marjoram, oregano, thyme, rosemary, parsley)
-sea salt & cracked black pepper to taste
-1/4 to 1/2 avocado

Here’s how I prepare it…

Instructions (filling):

-chop the onion finely and sautee in a frying pan with 1 teaspoon oil until caramelised and golden
-chop the red bell pepper, slice the mushrooms, halve the tomatoes and add them to the pan
-add the Italian herb mix
-add sea salt and cracked black pepper to taste
-once the veggies are cooked to satisfaction, add the baby spinach and stir into the mix until it wilts and then remove the pan from the stove
-peel, pit and slice the avocado
-the filling is ready!

Instructions (omelette):

-whisk the eggs together until well blended
-pour the whisked eggs into a heated pan that has been greased with 1 teaspoon oil
-once the one side is cooked, flip with a spatula and cook the second side
-please note that it’s always easiest to make an omelette with a good quality non-stick frying pan, but it is possible to make without a non-stick pan
-serve the cooked omelette on a plate and fill with the yummy veggie filling
-add the avocado slices & fold over half the omelette
-serve fresh, eat and enjoy!
